Recipe: Death By Chocolate

This is a great one for all of the chocolate lovers out there looking to stick to their keto diet.

Ingredients

  • 2 cups heavy cream
  • 1.5 cups almond milk or cashew milk
  • 0.5 cups cocoa powder
  • 0.5 cups sweetener
  • 4 large egg yolks
  • 3 ounces unsweetened chocolate
  • 2 tablespoons vodka
  • 0.5 teaspoon stevia extract
  • 0.25 teaspoon xanthan gum

Directions

  1. Make an ice bath, set a bowl over it, and set it aside
  2. In a medium sauce pan, using medium heat, combine the cream, 1 cup of cashew milk, the cocoa powder, and sweetener. Mix until it is mixed well and reads 170 degrees on a candy thermometer.
  3. In a separate bowl, whisk the egg yolks and slowly add 1 cup of the mixture made in step 2, whisking constantly. Slowly add the tempered yolks back into the sauce pan, cook and stir constantly until the mixture reaches 175 degrees on your candy thermometer. It should be thick enough to coat the back of a spoon.
  4. Remove this mixture from the heat and add the chopped unsweetened chocolate. Allow this to sit for 5 minutes and then whisk it so the chocolate is melted, smooth, and fully incorporated.
  5. Now you need to take this mixture and pour it into the bowl over the ice bath. Let this sit for 10 minutes, cover tightly with plastic wrap, and then refrigerate for 3 hours at the least.
  6. Remove the mixture from the fridge, and whisk in the remaining cashew or coconut milk, vodka, stevia, and if you choose, some vanilla extract. Now sprinkle the surface with the xanthan gum and mix very vigorously to create a homogenous mixture.

Now comes the hard part, because now it is time for you to make the actual ice cream, but you don’t have a real ice cream maker. Here, there are several options you can go with, so let’s take a look at these right now.

  • Put 2 cups of the ice cream mix in a 1 quart zipper-sealed bag and make sure that it is sealed securely. Fill up a gallon size zipper-sealed bag with ice, half way, and add 0.5 cups kosher salt, and mix it around a bit. Now, take the bag of ice cream base, sealed, and put it inside of the bag of ice and salt. Put this whole thing in a few plastic shopping bags and shake for about 10 minutes. The ice cream should now be frozen and ready to go.
