Is Regular Ice Cream Keto Friendly?
What you are probably interested in knowing is whether or not ice cream is keto friendly. Remember that on a keto diet, you have to limit your intake of carbs. Generally speaking, your normal keto diet will entail that you eat no more than 5% carbs of your total daily food intake.
For most people, this is going to mean 50 grams of carbs per day, or less, depending on your body size and weight.
Now, when it comes to regular ice cream, sadly, no, it is not keto friendly, not in the least. Ice cream contains a lot of sugar, and no fiber, which means that it is near the top of the list for the worst foods you can eat on a keto diet.
You just aren’t supposed to eat that much sugar either way, whether on a keto diet or not. You might be a little confused here, so let us explain. For those of you that don’t know, sugar is actually considered a type of carbohydrate, along with starches and fibers.
Fiber will counteract the amount of sugar and starch you eat; when it comes to your net carb intake, you can technically subtract the fiber from the sugars and starches for a lower total carb count.
However, because ice cream has so much sugar and no fiber, it quickly eats through your daily sugar intake allowance, and therefore your daily carb allowance.
Low Carb Ice Cream Recipe
Alright, so now that we have figured out that regular ice cream is not keto friendly, you may be a bit disheartened, but fear not, because there is a solution.
There are various low carb ice cream recipes that you can make at home that contain very little sugar and won’t take you over your daily carbohydrate intake limit. Let’s take a look at the best homemade low carb ice cream recipe for your keto diet.
Recipe: Death By Chocolate
This is a great one for all of the chocolate lovers out there looking to stick to their keto diet.
- 2 cups heavy cream
- 1.5 cups almond milk or cashew milk
- 0.5 cups cocoa powder
- 0.5 cups sweetener
- 4 large egg yolks
- 3 ounces unsweetened chocolate
- 2 tablespoons vodka
- 0.5 teaspoon stevia extract
- 0.25 teaspoon xanthan gum
- Make an ice bath, set a bowl over it, and set it aside
- In a medium sauce pan, using medium heat, combine the cream, 1 cup of cashew milk, the cocoa powder, and sweetener. Mix until it is mixed well and reads 170 degrees on a candy thermometer.
- In a separate bowl, whisk the egg yolks and slowly add 1 cup of the mixture made in step 2, whisking constantly. Slowly add the tempered yolks back into the sauce pan, cook and stir constantly until the mixture reaches 175 degrees on your candy thermometer. It should be thick enough to coat the back of a spoon.
- Remove this mixture from the heat and add the chopped unsweetened chocolate. Allow this to sit for 5 minutes and then whisk it so the chocolate is melted, smooth, and fully incorporated.
- Now you need to take this mixture and pour it into the bowl over the ice bath. Let this sit for 10 minutes, cover tightly with plastic wrap, and then refrigerate for 3 hours at the least.
- Remove the mixture from the fridge, and whisk in the remaining cashew or coconut milk, vodka, stevia, and if you choose, some vanilla extract. Now sprinkle the surface with the xanthan gum and mix very vigorously to create a homogenous mixture.
Now comes the hard part, because now it is time for you to make the actual ice cream, but you don’t have a real ice cream maker. Here, there are several options you can go with, so let’s take a look at these right now.
- Put 2 cups of the ice cream mix in a 1 quart zipper-sealed bag and make sure that it is sealed securely. Fill up a gallon size zipper-sealed bag with ice, half way, and add 0.5 cups kosher salt, and mix it around a bit. Now, take the bag of ice cream base, sealed, and put it inside of the bag of ice and salt. Put this whole thing in a few plastic shopping bags and shake for about 10 minutes. The ice cream should now be frozen and ready to go.
- One of the easiest ways to make ice cream without an ice cream maker is to use ice cube trays. You can simply add the ice cream mix into the ice cube trays and freeze them for about 4 hours. For this method, you need to reserve some of the heavy cream, because in a blender, you will be mixing the frozen cubes of ice cream base with the remaining heavy cream to create the low-carb keto ice cream.
- Another way to make your ice cream base into real ice cream is to use a shallow plastic or metal dish. Add the ice cream base into the dish and freeze for 45 minutes. Using a spatula or wooden spoon, stir the mix vigorously, then freeze for another 30 minutes, mix again, and repeat this a few times more until you have achieved the proper consistency.
